The manual places service design at the heart of learning and innovation. It provides educators with a practical framework in which students address real tourism business challenges through user-centered research, co-creation, ideation, and testing, while strengthening collaboration between universities and industry.
“Service design enables students to develop solutions to real-world challenges. The manual brings together the experiences and best practices developed throughout the project and provides educators with practical tools for teaching sustainable tourism,” says Nora Lappalainen, Project Manager of the ENRICHER hubs project.
The publication draws on Green Tourism Business Challenges implemented in Georgia and Moldova, where students developed sustainable service concepts for hotels, wineries, tourism organizations, and rural tourism businesses. The challenges provided valuable learning opportunities while offering companies fresh perspectives and development ideas.
“We hope that the methods presented in the manual will continue to be used after the project ends. It offers educators concrete ways to integrate service design and industry collaboration into tourism education,” says Annika Konttinen, Senior Lecturer and project expert in the ENRICHER hubs project.
The ENRICHER hubs project aims to modernize tourism education and strengthen sustainable tourism competences, particularly in Georgia and Moldova. The new manual represents a lasting project outcome that supports the integration of service design, sustainability, and university-industry collaboration in higher education.
