Digital labour platforms, e.g. Deliveroo, Uber, and Upwork, change the way industries operate. One heavily affected industry is the restaurant sector, whereby ghost kitchens and virtual restaurants pose to change traditional F&B business.

Haaga-Helia’s AlgoAmmatti-project looks at these changes from different points of view and across industries. As part of the AlgoAmmatti-project, the project team joined forces with UK-based researcher Mark Ashton (University of Surrey) and consultant Peter Backman (Horizons FS Limited) to analyse the costs and benefits participating in restaurant food delivery platforms brings from the viewpoint of the platform companies, the partner restaurants, delivery couriers, and end customers. The analysis was published in the Journal of Hospitality and Tourism Insights 22nd September, 2022.
